Baked Chicken Kumara and Spinach

So this one is from an old Australian cook book and it’s a really nice hearty dish for the whole family. For those of you who are not sure what Kumara is, it’s just another word for sweet potatoes. I tried it last sunday and was really pleased with the outcome 🙂 If you try it too, let me know if you liked it. So here is what you’ll need:

Ingredients:

  • 250 g feta cheese
  • 250 g packet frozen spinach, thawed
  • 2 large (1kg) kumara, sliced thinly
  • 4 (680g) chicken breast fillets, sliced thinly
  • 1 large onion, chopped finely
  • 2 tsp finely chopped fresh thyme
  • ¼ cup (60ml) light sour cream
  • ½ cup (125ml) chicken stock
  • 2 tsp plain flour
  • 1 tbs water
  • 2 cups (250g) grated pizza cheese

Instructions:

Crumble feta into medium bowl. Using hands, squeeze excess moisture from spinach, mix spinach with feta. Boil kumara until just tender, drain. Meanwhile, season and cook chicken in batches, in medium heated oiled pan until just cooked through and browned all over. Cook onion and thyme in same pan, stirring, until onion is soft; stir into feta mixture. Cook cream, stock and blended flour and water, stirring, until mixture boils and thickens. Place half the kumara, half the chicken and all of the feta mixture in layers in oiled ovenproof dish. Repeat layering with remaining kumara and chicken; pour cream mixture over the top. Sprinkle with cheese; bake uncovered, in moderately hot oven about 30 minutes or until cheese melts and is browned lightly. Happy cooking! 🙂
