Courgette Soup

This is a great soup you can make super easy and fast! I found the recipe in a new cookbook I just recently bought. It’s from Leon’s in London. I can recommend it as a quick appetizer, we had the hot version but apparently you can also have it as a cold soup in summer! 🙂

IMG_20151027_142132All you need is the following:

  • 550 g courgette
  • 1 onion
  • 30 g butter
  • 750 ml chicken stock
  • salt

Cut the courgettes into small pieces ( no need to peel them). Chop the onions. Heat the butter in a big pan and add the onions until they get translucent. Then add the courgettes and stir for about 1 minute. Add the stock bring to a boil, cover it and let it simmer for about 30 minutes. Use a food processor until it’s well blended or you might also want to leave some chunky bits 😉 Season with salt and pepper to your liking! Quick, easy and delish 🙂
