Mixed salad with coconut dressing

We had this lovely salad as a side dish a couple of days ago, I can only recommend it! It’s great for summer and tastes really fresh 🙂 The main thing is to get the dressing right but that’s super easy!



  • 1 red onion
  • 200g cherry tomatoes
  • 1/2 cucumber
  • lettuce
  • 1 lime
  • 80ml coconut milk
  • salt, pepper, sugar


Peel the onion and cut into thin stripes. Wash and cut the tomatoes in half, also chop the cucumber and make sure you take off the inner fleshy part (easy to do with a teaspoon). If your lettuce seems giant also chop it into bite-sized chunks. For the dressing squeeze the lime juice in your salad bowl and add the coconut milk. Add salt, pepper and a wee bit sugar until you’re happy with the taste and yes it might still taste pretty sour thanks to the lime but this won’t be a problem anymore once combined with the salad. This is what you do now, add all your ingredients to the dressing, mix it well and it’s ready to serve!
